Apricot bread


Any white bread mix for a 500g loaf
125g presoaked dried apricots

Chop the apricots as finely as possible and boil the water for the bread mix. Although the mix will say add warm water, take the full measure of boiling water, add the chopped apricots and stir until the water has cooled to the correct temperature for the bread mix, usually luke warm. Add the bread mix and follow the directions for the bread mix from here, with the exception of leaving the bread to prove for twice as long as specified.
