Vegetable Biryani - Serves 8


500g of diced potatoes
2 diced apples
1 x 400g jar of mango chutney
250g diced mushrooms
1 chopped red pepper
1 chopped yellow pepper
1 chopped green pepper
1 chopped courgette
3 chopped carrots

1 teaspoon Coriander
1 teaspoon Cumin
1 teaspoon Turmeric
1/2 teaspoon Chilli
1/2 teaspoon Ginger
1 teaspoon Garlic Powder or one clove of garlic

While preparing the ingredients, split everything into two pans except for the mango chutney, garlic and spices, which are added to one pan. Into this pan add water until the contents are covered by 1 cm of water. Bring this pan to the boil and then simmer covered for 1 hour . Remove from the heat and mash the contents until a fairly smooth mixture results.

Now add the rest of the ingredients and mix thoroughly. Continue to simmer for 30 minutes.

Serve on rice with Garlic and Herb bread.
