Creole - Serves 4


500g meat (Prawns/chicken)
250g mushrooms
1 onion
1 250g tin of chopped tomatoes (the juice is required)
2 sticks of celery
2 peppers (different colours: red and yellow)
Vegetable oil
Vinegar

Seasoning - 1 tablespoon of each :-
Salt, black pepper, garlic powder, paprika, sugar, cajun seasoning (Schwarz), chilli sauce.

Chop all the vegetables so that none are larger than 1cm3.
Using a large wok, add approx 2mm of vegetable oil and heat. Add all the seasoning and the prawns/chicken to the hot oil and stir vigorously for 2 minutes. Now add all the vegetables and fry for 5 minutes. Finally, add the tin of chopped tomatoes and simmer for 30 minutes.

Serve with rice or cous cous.
