Lyn's Lemon Pud


60g unsalted butter
125g Sugar
Grated rind and juice of one lemon
60g self raising flour
300ml milk
2 eggs - yolk and white separated

Preheat oven to 200c or gas mark 6

Cream the butter, sugar and lemon rind in a bowl
Add the egg yolks and flour, and beat well
Add the milk and lemon juice, and mix well.

Whisk the egg whites in a separate bowl until stiff. Fold into the rest of the mix

Pur the mix into a buttered dish and stand in a tray of water, and bake for about 45 minutes.
