Chicken Madras - serves 2 or 3


Madras spice mix - start with a teaspoon for the first ingredient and slowly reduce amount for each item down to 1/4 teaspoon for the last ingredient:
Coriander seed
Turmeric
Ginger
Cumin
Fenugreek
Mustard Seed
Garlic
All spice
Cayenne pepper
Black Pepper

450g diced chicken
one chopped onion
1 tablespoon plain flour
1 tablespoon mango chutney
300ml chicken stock

Fry the chicken and onion for 3-4 minutes. Blend in the rest of the ingredients and simmer for 20 minutes. Serve with rice.
