Ingredients
1 pint of boiling veg stock (or boiling water with veg stock cube(s) added)
50g Pearl Barley
70g Lentils
50g butter
1 onion, chopped finely
160g cooked carrot, mashed
150g cooked mixed beans (adzuki and mung, preferably)
200g porridge oats
2 Tbsp Soy Sauce
1 Tsp Rosemary
1 Tsp Thyme
1 Tsp Salt
2 Tsp Black Pepper
In a pan, add the Pearl Barley into the boiling veg stock and bring heat down to simmer for 10 minutes. Add the lentils and simmer til cooked (approximately another 10-15 minutes). In a large frying pan, melt the butter then slowly fry the finely chopped onion on a low heat til soft. Add the remaining ingredients, and the lentils-barley-stock mix, then add another 300ml of boiling water. Stir well, then compact into the bottom of the frying pan. Take off the heat and cover with a lid and a towel, to keep the heat in. Leave for 20 minutes. Serve, adding additional salt and black pepper if preferred.
