Vegetable Chilli - Serves 5-6


1 can of Red Kidney Beans
1 can of (Tescos') Hot and Spicy Mixed Beans
1 can of (Chopped) Tomatoes
1 can of Ratatouille
Handful of mixed peppers
Handful of mixed vegetables
Handful of diced mushrooms
One chopped onion
Tablespoon of hot chili powder
Tablespoon of oregano
Tablespoon of ginger
Tablespoon of cumin
Tablespoon of coriander
Tablespoon of garlic powder


If the tomatoes aren't chopped, chop them and add everything (except the mushrooms) into a large pan.

If this is not an "In Valen's name, unexpected guests" meal, then I recommend leaving the pan to stand for 6 hours in a cool place, preferably the fridge, to allow the flavour to get through the ingredients and then simmering for 20 minutes.

Otherwise, simmer for 30 minutes.

Finally, add the mushrooms and mix thoroughly. Continue to simmer for 5 to 10 minutes.

Serve on rice with Garlic and Herb bread and/or Doritos
